I can see only a little of this contraption, but not the actual usage and head movement.
I wonder if there is a Ninja Gaiden video with NES Roll 'n Rocker.

A little, mostly because it was hard to find a way to record that worked without any problems...

It controls pretty well but as you see every now and then it seems to not respond as well which surprised (and angered) me

The absolute BEST game to play with that controller is Punch-Out. Pretty satisfying to beat the crap out of someone on the NES.

I only watched the first few minutes, but I was pleasantly surprised at your level of control. It makes me want to take a crack with my U-Force... maybe someday soon. Have you ever tried the Uforce Power Games? It was a cancelled prototype of what would've been a pack-in or intended game for the peripheral, kind of like Super Glove Ball was to the Power Glove.
