I thought about that before too.  I guess the 'nuggets' part comes from various small 'nuggets' you get off the chicken, and you're not necessarily getting just the part you want.

I think the word "nugget" is used because it's defined as "a small compact portion or unit." Chicken nuggets are small compact portions of chicken-like things.
